Ingredients:
- 2 Large Boneless Skinless Chicken Breasts
- 8oz Sweet Potato Fettuccine
- 1 1/2 Tbsp Sliced Garlic
- 2 Tbsp Olive Oil
- 2 Tbsp Parsley
- 1 Cup White Wine
- 1 15oz can of Bertolli Alfredo Sauce (Reduced Fat)
- Salt & Pepper To Taste
- 1 Tsp Paprika
- Fresh Basil for garnish
Rub the chicken breasts with sea salt, pepper and paprika.
Heat grill on medium and grill chicken breasts both sides until internal temperature of 165 degrees.
Med heat add olive oil and garlic and saute until garlic is translucent (not brown).
De-Glaze with white wine and reduce by half.
Add Reduced Fat Alfredo Sauce and Parsley to wine and garlic and stir until heated through. (You can get your favorite at the super market or make your own)
Add 1/2 Tsp Black Pepper stir and set aside.
In a large Stock Pot, boil water and cook Sweet Potato Pasta until Al-Dente (Sweet Potato Pasta will cook faster than regular fettuccine pasta so watch that pasta). Drain when cooked.
