
Hummus originated in Egypt and is an Arabic word for ‘chickpeas’. Though chickpeas were widely eaten in the region, and they were often cooked in stews and other hot dishes, puréed chickpeas eaten cold with tahini do not appear before the Abbasid period in Egypt and the Levant. The earliest known recipes for a dish similar to hummus bi tahini are recorded in cookbooks published in Cairo in the 13th century.

Walking the streets in the Middle East and Greece, I have had some of the BEST Baklava in the world. I have brought this recipe back with me to the USA so we all can experience this AMAZING dessert called Baklava.
Ingredients –

Here’s what Cha Do Instructions:
Thaw the Filo Dough according to the directions (overnight may be required). When thawed, roll out the dough and cover with a damp towel to keep it from drying out.
In a food processor, chop the Pistachios into small, even-sized pieces.
Separately follow the same steps for the Walnuts – keep the Pistachios and Walnuts separate.
Place a sheet of Filo Dough into the greased sheet pan. Use a pastry brush to coat the Filo Dough with unsalted melted butter.
Make sure the last layer (Top) is at least 4 Filo sheets thick. Make sure each sheet is individually buttered, including the last sheet.
Use a sharp knife, make one slice all the way through, from corner to corner. Continue cutting, criss-crossing until you have a bunch of diagonal pieces.
Bake at 350°F for 30-35 minutes or until lightly golden brown and edges appear slightly crisp. While the Baklava is baking, make the syrup. (Important) You will want the syrup ready to go the minute you remove the Baklava from the oven.Syrup
Syrup Time! Combine the Rose Water, Sugar, Date Molasses, Lemon Juice and Cardamon and water in a medium saucepan. Bring to a boil then down to medium heat and let simmer for 8 minutes and slightly thickened. Take off heat and let the syrup to cool.Finish
Spoon the cooled syrup over the top of the your new FAVORITE baklava dessert right after you remove from the oven.

Portobello Mushroom Recipes Mushroom Recipe Ideas – Looking for that perfect mushroom recipe or a side for your steak or chicken…yep your looking at it now!

If you could only eat a picture! Anyway back to the recipe…
Ingredients:
• 16 oz Portobello Mushrooms
• 1 1/2 On The Road Eats No Salt All Purpose Seasoning
• 2 Tbsp no salt Butter
• 1 Tbsp Olive Oil
• 2 Tbsp Shallots
• 3 Tbsp Parsley
Here is what cha do!

Thick Slice the Portobello Mushrooms, Small Dice the Shallots, Fine Chop the Parsley. Heat sauté pan on Med Hi heat.
Heat butter and olive oil…

add Shallots and sauté for 3 minutes.

Sauté the Portobello Mushrooms for 5-8 minutes.

Thoroughly mix in the Parsley and continue to sauté until all is incorporated about 3 minutes.

Take 1 1/2 of OTRE No Salt Seasoning mix and your on your way to Mushroom Heaven!

Serve as a side dish with your favorite meal, add it as a topping to your steak or eat by itself! The chickpea is high in protein and has been around for A LONG TIME. It is one of the earliest cultivated legumes and a staple in the Middle East from dips to Falafel. Here is what you need to make this Awesome Chickpea Salad Recipe…

Ingredients:
• 2 Tbsp On The Road Eats Falafel Seasoning
• 2 15 oz cans of chickpeas or 3 cups of cooked chickpeas
• 1 Bell Pepper (Use Red for Color) med dice
• 1 1/2 Cups fresh Italian Parsley (rough chop)
• 1/2 Cup red onion med dice
• 3 1/2 Tbsp Olive Oil (EVOO)
• 3 Garlic Cloves minced
• 1/3 Cup Feta Cheese
Here is what cha do!
Cut all your veggies and mince your garlic.
In a large bowl combine the chickpeas, bell pepper, red onion, and Italian parsley. Mix thoroughly.
Add the olive oil and On The Road Eats Falafel Seasoning mix thoroughly cover and put in refrigerator for 1 hour.
Garnish with Feta Cheese and serve!
Serve as a side or this is a great Healthy Salad on its own…Big on Falafel flavor and Low on Salt = a Win Win Salad!
