Ingredients:
• 2 Tbsp On The Road Eats Falafel Seasoning
• 2 15 oz cans of chickpeas or 3 cups of cooked chickpeas
• 1 Bell Pepper (Use Red for Color) med dice
• 1 1/2 Cups fresh Italian Parsley (rough chop)
• 1/2 Cup red onion med dice
• 3 1/2 Tbsp Olive Oil (EVOO)
• 3 Garlic Cloves minced
• 1/3 Cup Feta Cheese
Here is what cha do!
Cut all your veggies and mince your garlic.
In a large bowl combine the chickpeas, bell pepper, red onion, and Italian parsley. Mix thoroughly.
Add the olive oil and On The Road Eats Falafel Seasoning mix thoroughly cover and put in refrigerator for 1 hour.
Garnish with Feta Cheese and serve!
Serve as a side or this is a great Healthy Salad on its own…Big on Falafel flavor and Low on Salt = a Win Win Salad!
